Why Is My Oven Not Baking Evenly?
All ovens use a temperature sensor inside the oven to gauge how hot the interior gets. If the temperature sensor breaks, the oven could stop heating evenly because it incorrectly assesses the interior as hotter or cooler than the real temperature.
An oven might also have calibration problems that cause uneven cooking. If the oven isn't properly calibrated, the temperature it heats to won't match the number you've set the dial to.
Types of Ovens and Uneven Cooking
The type of oven can affect how evenly your meal cooks. Electric and convection ovens tend to provide a consistent dry heat throughout the oven, which often leads to more even heat levels throughout the cooking process. Gas ovens heat up more quickly and retain more moisture during the cooking process, but this can lead to less even temperatures.
Electric Oven
While electric ovens tend to offer consistent cooking temperatures, components that help maintain the heat level could malfunction or break. An electric oven cooking unevenly could be caused by damage to the heating element. When the oven is off, visually check the heating elements for any cracks or blistering that could indicate a problem.
Gas Oven
Because gas ovens sometimes heat unevenly simply because of their method of operation, you may need to figure out what techniques, recipes and methods work best to ensure everything cooks properly. Try turning pans 90 degrees halfway through the cooking process to get more even heat distribution. If you discover your gas oven cooking unevenly when it hasn't in the past, consider having a professional check the internal thermometer and calibration.
Fan or Convection Oven
Convection ovens (also called fan ovens) circulate the heated air around cooking food, so they tend to heat more evenly than other types. For this reason, fan ovens work particularly well when you're cooking multiple dishes on different racks at the same time. If a convection oven starts heating unevenly, the fan that circulates air might require repair.

In some cases, your cooking behavior affects oven heating, so changing your habits might have an impact. Simply keeping the oven door closed could improve temperature consistency inside the oven.
Overcrowding can also cause uneven heating in an oven. Trying to put too many items on the oven racks could impede airflow, which can lead to unevenly cooked meals. It's a good idea to leave at least a couple of inches of space between dishes to let air flow freely around the pans.
Make sure your oven has properly preheated before putting food inside. Most ovens have an indicator light that lets you know when the oven is at the proper temperature.

Why Your New Oven Cooks Unevenly
A brand-new oven not cooking properly typically indicates a manufacturer's defect — potentially with the heating element — and a repair or replacement is typically under warranty. Before you call a professional, make sure you're following the manufacturer's instructions for operation, including not trying to cook too much at once, rotating pans as recommended and not opening the oven door frequently.
One other possible issue that could cause uneven heating is the floor where your oven sits. If your kitchen floor is tilted or angled, the oven could also be shifted subtly, which might impact how the distribution of hot air occurs inside the cavity. Installing levelers beneath the oven can provide a more consistent cooking experience and also prevent potential safety issues.
